Directs & coordinates activities as they apply to the Harbour Town Conference Center operations including Banquets and Catering.

- Plans, preps & executes all resort wide banquet/catering events to the highest possible resort standards.
- Implements all new menus & provides training as applicable & necessary, both initially & ongoing per specifications.
- Implements ordering specifics & par levels to insure sufficient & cost effective inventory levels.
- Regularly inspects kitchen coolers, freezers, storage facilities to insure proper portion control, freshness of product & sanitation per DHEC specifications.
- Responsible for overall cleanliness and organization of Harbour Town Conference Center waste removal /recycling area.
- Inspect all kitchen equipment on a weekly basis & report problems via e mail/trouble tickets to Facility Services & the Executive Chef.
- Schedule monthly front & back of the house joint meetings to discuss opportunities & events.
- Monitor the department’s food cost/kitchen labor cost status & plan accordingly.
- Executes all banquet functions & tastings per specific BEO requirements with an eye to precision & attention to detail.
- Recovers all food by product at the end of the function for “retooling” or use in the restaurants.
- Recovers all kitchen equipment, display pieces & small wares at the end of the function for return, if applicable, to the HTCC kitchen.
- Assist the Resort Executive Chef and F&B Director as directed.

REQUIRED SKILLS DETAILS

Microsoft Office, inventory control software.

Ability to read & interpret documents such as banquet event orders, safety rules & operating documents. Ability to write routine correspondence & reports. Spanish as a second language is desirable but not required.

While performing the duties of the job the employee is regularly required to stand, walk, reach with arms & hands & talk or hear. The employee is occasionally required to sit, climb or balance & stoop, kneel or crouch. The employee is regularly required to lift 10 pounds, frequently required to lift 50 pounds & occasionally required to lift 100 pounds. While performing the duties of this job, the employee is frequently exposed to outside weather conditions.

Ability to solve practical problems & deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written or oral form.

Manages a total of 8-14 employees throughout the resort. Carries out responsibilities in accordance with the organization’s policies & applicable laws. Responsibilities include interviewing, hiring & training employees; planning, assigning & directing work; appraising performance; rewarding & disciplining employees; addressing complaints & resolving problems.

REQUIRED EXPERIENCE


College degree preferred with additional degree or certification from established culinary school and 3-5 years of experience and/or training; or equivalent combination of education and experience.
